Eagle Rock Lodge Granola

Make this Granola gluten free by using only GF cereals (GF Cornflakes and GB Oatmeal) – just as tasty!

Tips:

  • I add the raisins and dried cranberries AFTER baking so they don’t get all dry and hard.
  • I add coconut and other nuts before baking.
  • I also usually sprinkle some brown sugar and cinnamon over the top of it before baking – not much.
Prep Time: 30 Minutes
Cook Time: 10 Minutes
Total Time: 40 Minutes
Servings: 2 hotel sheet pans of granola

Ingredients:

  • 8 cups of Oats (Old Fashioned Oatmeal Oats; no instant Oatmeal)
  • 8 cups of Bran Flake cereal
  • 2 cups of Corn Flakes
  • 2 cups of Slivered Almonds
  • 3 cups of Chopped Walnuts
  • 1 lb of butter (melted)
  • 2 cups of Honey
  • Optional: You can also add things like: Coconut, Raisins, Dried Cranberries, other kinds of nuts, other kinds of seeds (I sometimes add flax seeds)

Instructions:

  1. Mix all together.

  2. Line hotel pans with parchment paper.

  3. Spread the mixture on the parchment paper (not thickly) and bake in a 350 degree oven until it is done to your liking (not too brown/not too light).

  4. Let cool and then break into chunks.
